I have been in a similar situation where there was no documentation and I had to convert the application into a cloud app.
With patience you will find your way of getting it done one bit at a time.
The worst part is - these apps are used by different people and different teams and a bug for one person/team could be a feature for other.
Best of luck, you would need a lot of patience.. sply with those business people who doesn’t know shit about application development but will be quick to judge you as inefficient. Don’t let these people effect your morale. -

This sounds so all familiar to me... just missing the end user part -
Business user -"man your code has bugs,, we never asked this to work like this, I explained this when we were discussing the requirements"
Me- (showing the minutes of the meeting on presentation screen, with an approval mail from him) I remember discussing exactly this with your approval on it.
Business user- "ok we will come back to this later, what about feature Bla bla bla"
Me - "This sounds new to me, we never discussed this"
Business user - "ok, when can we get this by tomorrow EOD"
Me (thinking) - Abra kadabra make me disappear from here -

I got a similar email (in technology I worked in), the recruiter insisted on talking on phone - pissed me off with his non sense questions and super confident attitude while asking those... tried to explain him calmly... eventually the call ended up he declaring that I m not the right candidate for the skill set he is looking for ... I believe he was right 🤣

Don't be discouraged... I had been consulting in the past... I can narrate you many incidents (both on call and in person) with a recruiter where they didn't knew anything about the job and even behaved like I don't have the skills ... Most of them have a perception like java and JavaScript means the same thing...
