Companies are always on lookout for cost saving. However I don't agree that most of clients have such absurd expectations. It only happens when you are over sold to the client. Otherwise usually companies know what utility they are going to get from outsourced engineering work, and hire consultants onsite for optimization and refinements.

IMH opinion the differing factor between Fullstack and frontend devs these days is CSS.

Language choice depends upon the constraints and requirements of the project. It seems unlikely that ONE person will work in all these domains (Mobile Dev, Frontend dev, System dev, Backend services, Desktop App dev) you mentioned.
I would suggest to chose one dynamic language and one statically typed language. If you want to work on data, then python.
To answer the other question, yes if interested in Android dev, definitely learn Kotlin and flutter.
And No, Java isn't going anywhere. -
For unit tests, you can stub those api calls and make assertions around all the possible scenarios and responses that can come from those APIs and make sure your program handles them.
For integration or end to end tests, you can write mock implementations and some valid fixture data, which will be returned by these mocks. You can even spin docker containers which will be running those mock implementations. Now for your application this container will act like that third party API. However this approach is a bit painful. -

Everyone out there, why dont you just try onlyoffice desktop editors.
I wont even try to prove that it is best.
Just try it once and you will be amazed by its compatibility with ms office and its stability. -
Dolphin is the best file manager out there.
Just try it with an OPEN MIND -
Brave is a nice browser but it is in its early stages.

My system also have 8 GB RAM and I do android development using AS + Gradle.
Believe me, it only takes ram between 1-1.8 GB.
I mint KDE Edition and with several tabs on chrome and android studio running, my memory usage is usually 3 GB -
