All these developers complaining about not being able to finish the million side projects they have and I'm sitting here wishing I was creative enough to have one.

You might be able to finish one of my side projects or participate in one if you're willing to sign an NDA.

I know someone with plenty of side projects if uve time.

Go hunting on GitHub, that's usually how I do it. Then find something fun and think "How can I do this with a twist?" or "How can I do something exactly like this without anyone noticing?" or "How can I justify stealing this, improving it slightly and calling it my own?"
