Request permission from the company to use the apps in your portfolio.
If the portfolio is private, and for use in job interviews then you could silently remove branding from the screenshots, and add them to the portfolio anyway. This is what I use to do before I had public web/ios apps. -
Almost every company expects this. You just need to offer a description of the work you've done and for who, and offer references who can verify that work if required.

In Germany you have a right to get a reference from you current or previous employer. It usually contains the job description and how good you did your job.
Unfortunately I don't know how this is in other countries.
