Its a lot of work if you have a lot of existing projects.
But for new projects, document what data you use and why. Have your users sign it and you should be okay -
Trying to gather as much info, to be able to patch that into all previous and new clients that ask for/need it, mainly looking currently at iubenda, to buy their privacy policy once and then smash that across all clients.

@AlexDeLarge if its your servers you should still sign a "verwerkers contract" don't know the english term because you can acces their data.

Voxera115856yAlso, remember, if its your customers data its THEIR legal responsibility to have a contract, not yours ;)
Its always the data owner that has the obligation.
BUT if you gather logging data on the visitors aside from that your customers has asked for, then that data is your responsibility.
But there is also multiple ways you can get the permission.
Keep an eye on the more moderate articles on GDPR and you should get a good grasp. All dooms sayers are overdoing it, and be wary of juridical advise as they most likely try to sell their services at high premium ;) -
The only data i ever saved is username/password/email, and i always explicitly told the users that i do save those and dont use them for anything but account management, so im fine.

From what I've read, the key seems to be: don't collect more than you NEED, and provide a way to download and delete what you do collect.
If you aren't collecting ridiculous amounts of data to analyze users then you *could* be fine.
