Probably the logic is to prevent an overload of claims since they are processed manually by employee hence the working hours availability of claim appliance.

Or that sentence was output from an algorithm that spits out text, and there was a ! conveniently located in front of the times it got as input.

7am-7pm M-Sat and closed on Sunday makes a lot more sense.

!(7am-7pm M-Sat and never on Sunday) == (7pm - 7am M-Sat, all day Sunday)

Reminds me of the websites that closed at 5pm and reopened at 8am.

Like wtf.

I tweeted at them and they confirmed the times are correct. They said their service wouldn't be able to handle the traffic if it was available during the day 😂
