@trickory That will make Word dark but I think he also want the pages to be dark and text to be white.

The dark theme is not too great in word since I also had that craving . If you click on file and then options, in general theme is there you can change it from there.

I'm all for vim and LaTeX, but how do you go about collaborating with someone live over internet through that? Is gobby still the best choice?

Some day you will want all letters do be dark paper. You know because word has a white background because it is supposed to look like paper
